I really like eggplant parm, but agree with little navigator that not everyone can pull it off. I'm a pretty good cook, but I'll admit I seldom do well with the eggplant. I'll take rain's secrets and try again

Yep, the zucchini lasagna was quite tasty! I kind of made it up as I went along, I do that a lot and then never remember exactly how to re-make the good stuff the same. One thing I did, though, is grate the zucchini rather than chop, I wanted a more evently distributed and subtle zuke throughout rather than a chunk here and there. Worked out well. Also through in some "Smart Ground", most delicious. Abundance of cheese, of course. I can't live without my cheeses.

"Rain, eggplant parm is good, but it’s one of those dishes that not everyone can pull off. I’m not sure why that is."

It's one of my best dishes. The secret is seasoned breadcrumbs and fresh eggplant.

Erika, The Other Woman's Shoes sound like an interesting book.

I've never heard of Tom's Orange Mango gel. I LOVE Mangos.

Doug, did you make the lasagna? I don't cook but want to learn how to make veggi lasagna. Hmmm...maybe I'll try to make it this weekend. I don't know how to cook so I eat out every day.

Diane, one thing I dislike is conducting research for a novel. But I have to as well.
